Mexico Vacation!!

Happy Wednesday friends! It’s been too long. We had a busy but productive weekend and then with Halloween and not feeling well on Tuesday this week has gotten away from me!

We had a great Halloween with my parents and family. We went down to my mom’s cousins’ house and handed out candy down there. They had lots of good food and I made the brownies below. They were so good. They really do taste like thin mints 🙂


I also made stuffed mini sweet peppers and they were a huge hit. I used this recipe linked below as the basis but because I was limited on time and didn’t have some of these ingredients on hand, I edited it a bit.

I used garden veggie and jalapeno cream cheese for the filling instead of regular cream cheese but other than that, I followed the recipe. Seriously so good! Everyone loved them so try it out…would be great for a holiday party or as an appetizer!

Now on to VACATION! We went to Cancun, Mexico for a week in October and it was fabulous. Levi and I went with our good friends Nolan and Lindsay. We have taken trips with them before and always have a great time!

We stayed at the Excellence Riveria Cancun. It is a gorgeous resort with 10 restaurants and bars. They have several pools and the grounds are in great condition. The food quality was good and we liked most of the restaurants. There were a couple that either had bad service or the food was just ok. However some of the others were fabulous. I loved the tapas, Italian, hibachi grill, French and Indian restaurants. The buffet was also REALLY good for breakfast. Nutella and peanut butter pancakes should be an every day thing in my book!


We had a swim out room that had access to a pool area just for people with rooms like ours. It was nice to have a place to relax after being at the big pools all day.

The beach was gorgeous as well. It was white sand and really smooth. However October is technically the end of Mexico’s hurricane season so they do have seaweed that is pushed ashore but they do a good job of raking it up!


We basically sat poolside and ate and drank the week away. We did do an excursion one day and took a catamaran out to snorkel. It wasn’t our favorite but it was fun to get off the resort for a bit! I got some new sunglasses (below) for vacation from Blenders Eyewear. They were perfect for the pool and so fun for pictures!!


Here are few more pics from the week! My phone didn’t have service so I left it in the room a lot but it was super nice to disconnect.
